I have been using George Greenstein's bagel recipe for years. I add the 24 hour (or more) refrigeration period that is in the old-school NYC bagel making style. Only thing that is missing is New York water.

Comfort Foods: Yeong Kwok and rice

While I might be the only one driving around the Midwest tasting and judging bagel, I know we all feel quite passionately about our comfort foods. While I was in Ann Arbor during the Michigan leg of my Midwest Bagel Quest, my husband Matt and I had dinner with Yeong Kwok, Cathy Kim. Yeong and Matt were college roommates back in the 1980s and he talked about what the word rice means in Korean and how difficult it is to make kimchi. You can hear our conversation below.
